With the summer heat surrounding us in upstate New York, we tend to look for light, “cool” dining options at dinner. I love spaghetti and meatballs, but July and August usually pass for it. I like a nice cold green salad and all the concoctions that come with it.
A salad is a great way to cool down. great freshness. Served with a leafy green salad, a tangy balsamic vinaigrette, and can be topped with chilled shrimp or avocado. Yes, sir, we are talking now.
When I was a kid, all salads were the same. In a small wooden bowl, stuff iceberg lettuce, tomato or cucumber slices, onion slices, and (if you’re lucky) half a hard-boiled egg.
